Why would working on the Sabbath mean death?

The chapter says it plainly: "Everyone who profanes it shall surely be put to death; for whoever does any work therein, that soul shall be cut off from among his people" (31:14), and again, "Whoever does any work on the Sabbath day shall surely be put to death" (31:15). The reasons it gives for keeping the day are that it "is holy to you" (31:14), that it is "a sign between me and you" (31:13), and that it is kept "for a perpetual covenant" (31:16). The Ten Commandments give the Sabbath command with no penalty (20:8-11). In Numbers, the people held a man found "gathering sticks on the Sabbath day" until the LORD answered, "The man shall surely be put to death" (Numbers 15:32-35). When Jesus was asked, "Is it lawful to heal on the Sabbath day?" (Matthew 12:10), he answered, "Therefore it is lawful to do good on the Sabbath day" (Matthew 12:12).

The first man the Bible says God filled "with the Spirit of God" is a craftsman, Bezalel, given skill for gold, stone and wood (31:3-5). In the LORD's instructions for the tabernacle, the seventh speech is about the Sabbath, and one Hebrew word names both Bezalel's workmanship and the work that stops. Then come tablets "written with God’s finger" (31:18).
