Why would touching or seeing the holy things mean death?

The chapter gives the rule and its purpose, not a reason for the danger. The rule: "they shall not touch the sanctuary, lest they die" (4:15), and "they shall not go in to see the sanctuary even for a moment, lest they die" (4:20). The purpose: "Don’t cut off the tribe of the families of the Kohathites from among the Levites; but do this to them, that they may live, and not die, when they approach the most holy things" (4:18-19). The same verse goes on: "Aaron and his sons shall go in and appoint everyone to his service and to his burden" (4:19). Numbers 1 had said the Levites camp around the tabernacle "that there may be no wrath on the congregation of the children of Israel" (Numbers 1:53). When Nadab and Abihu died, Moses told Aaron what the LORD had said: "I will show myself holy to those who come near me" (Leviticus 10:3). Later the Bible records Uzzah, who "reached for God’s ark and took hold of it" (2 Samuel 6:6) and died there (2 Samuel 6:7), and the men of Beth Shemesh, struck "because they had looked into the LORD’s ark" (1 Samuel 6:19).

Numbers 4: Covered, then carried

The Kohathites carried the most holy things but were not to touch them or even see them: Aaron and his sons covered each piece first, and only the ark went with its blue cloth on the outside (4:5-15, 4:20). And Merari's clan, who carried the boards and sockets, had the most men from thirty to fifty: 3,200 of the 8,580 (4:44, 4:48).
